We’ve been a big fan of Barbara Swell and her cooking classes since Kim wrote about the pie-making lady who’s keeping Appalachian food traditions alive for Blue Ridge Country Magazine. Barbara teaches small-sized cooking classes at her cabin, and now her daughter, Annie, will be teaching her own class on how to make gluten free pie crusts.
The class is on Wednesday, February 11, 2015 from 5:50-8:30 p.m. at Barbara’s house in Asheville, North Carolina. Sign up online.
Learn about gluten free pie baking & how to make a gluten free pie crust that is every bit as tender and flaky as the ‘regular’ sort. The class will cover flour blends, techniques for mixing and rolling out gluten free crusts, how to adapt recipes to be gluten free, and how to safely bake for celiac/super gluten sensitive when you don’t have a dedicated gluten free kitchen. With the crusts you will make both savory (pumpkin/leek and sausage/kale) and sweet hand pies (apple and blackberry). Price of $50 includes a snack, wine, & ingredients. Please bring your own mixing bowl.
